Chicken fried rice
A speedy, warming bowlful made even easier with Co-op frozen veg

1 tbsp sunflower oil
2 Co-op British chicken breast fillets, chopped
150g Co-op British Brussels sprouts, thinly sliced
2 spring onions, chopped
175g Co-op frozen mixed vegetables
250g pack Co-op Chinese egg fried rice
Co-op light soy sauce (optional)


Heat 1 tsp of the oil in a frying pan or wok, and stir fry the chicken on a high heat for 4-5 mins, until just cooked

Set aside and keep warm

Wipe out the pan, add the rest of the oil and stir fry the sprouts and spring onion for 2-3 mins

Add the veg and 2 tbsp water, and stir fry until thawed and softened

Add the rice and another 2 tbsp water, and stir fry for 2-3 mins

Add soy sauce to taste, if using, then return the chicken to the pan to heat through
