Chicken salad
Add your own twist to this colourful chicken salad with whatever veg you like

4 Co-op Loved by Us chicken breasts fillets
200g green beans, trimmed
150g Co-op sweet chilli baby beetroot or pickled beetroot
200g cherry tomatoes
110g Co-op Loved by Us baby leaf salad
2 tbsp extra virgin olive oil
1 tbsp lemon juice
100g feta cheese, crumbled (optional)
50g pine nuts


Cook chicken thoroughly following pack instructions
Allow to cool before cutting the chicken into chunks
Meanwhile, cut the beans in half and steam until tender
Dice the beetroot and halve the tomatoes then put into a bowl with the beans and leaves
Whisk together the oil and lemon juice to make the salad dressing
Add the chicken and feta, if using, to the bowl, then top with the pine nuts and dressing
