Earl Grey granola

Earl Grey granola
The combination of tea and granola works surprisingly well

1. 6 Fairtrade Earl Grey teabags
2. 250ml Co-op maple syrup
3. Pared zest of 2 lemons
4. 500g jumbo porridge oats
5. 150g mixed nuts, roughly chopped
6. 3 tbsp Co-op vegetable oil
7. 1 tsp ground cinnamon
8. 125g Co-op seed mix
9. 50g Co-op desiccated coconut
10. 50g each dried cranberries, raisins and apricot pieces
11. Co-op Greek style natural yogurt and fresh fruit, to serve (optional)


1. In a pan, simmer 2 tbsp water, 2 of the teabags, the syrup and zest for 2 mins, then infuse for 1 hour
2. Preheat the oven to 170˚C/fan 150˚C/Gas 3
3. Strain the tea mixture, reserving the zest, then combine with the oats, nuts, oil, cinnamon and reserved zest
4. Spread out evenly on 2 lined baking trays
5. Bake for 20 mins, then stir in the seeds and coconut
6. Cook for another 20 mins
7. Cool completely, then stir in the dried fruit
8. Store in an airtight container, with the other teabags for extra flavour, for up to 3 months
9. Serve with the yogurt and fruit, if using
