Herby roast chicken
Juicy chicken cooked in one dish with lemon and thyme. Just add ready made mash for an extra easy dinner tonight

1 tbsp plain flour
1 tbsp olive oil
2 tsp dried thyme
4 cloves garlic, unpeeled
1 large lemon, thickly sliced
100ml chicken stock
150g Co-op British frozen peas
750g Co-op British chicken thighs
400g Co-op mashed potato


Preheat the oven to 220°C/fan 200°C/Gas 7

Toss the chicken with the flour and a little pepper in a roasting tray, then with the oil, thyme and garlic

Roast for 20 minutes, then add the lemon and pour over the stock. Roast for another 10 minutes

Heat the mashed potato and peas as directed

Serve with the chicken and roasting juices, mashing some of the cooked garlic, peeled, into the potatoes
