1/2 x 600g pack Co-op lean diced steak
1 tbsp sunflower oil
1 red onion, peeled and chopped
1 red pepper, deseeded and diced
1 tbsp red wine vinegar
1/2 tsp dried thyme
Zest and juice of 1 orange
2/3 x 340g jar Irresistible tomato and pancetta pasta sauce
Freshly ground black pepper
Serve with toasted slices of Co-op Irresistible sourdough (optional)
Fry the diced beef in the oil in a non-stick frying pan for 5 mins until sealed on all sides.
Add the onion, pepper, red wine vinegar, thyme, orange zest and juice, and stir.
Add the tomato sauce and 100ml water to the pan.
Bring to the boil, reduce the heat, cover and simmer for 1 hour, stirring occasionally.
When ready to serve, season with freshly ground black pepper and serve with a couple of slices of toasted sourdough, if you like
