Cheese & potato quick pasties
Perfect as a snack or light bite, these pasties with a creamy veg filling are fantastic served hot or cold!

Ingredients

150g Coop light soft cheese
2 tbsp Coop semi-skimmed milk
50g Coop British lighter grated mature cheese
540g can Coop Honest Value new potatoes in water, drained and sliced
1 spring onion, sliced
400g can Coop cut green beans in water, drained and rinsed
100g Coop frozen British garden peas, defrosted in the microwave
8 Coop plain tortilla wraps
1 Coop Honest Value free range egg, beaten

Method

1. Preheat the oven to 200°C/fan 180°C/gas 6 and line two large baking trays with greaseproof paper

2. In a large bowl, mix the soft cheese and milk until smooth

3. Season, then stir in the cheese, potatoes, spring onion, green beans and peas

4. For each pasty, lay a wrap on the baking tray and brush around the edge with egg

5. Put some of the potato mixture onto one half, then fold the other half over

6. Working from one side to the other, tuck the top edge under the bottom one and press together

7. Repeat with the rest of the wraps and filling

8. Brush the tops with a little of the remaining egg, then bake for 12-15 mins, until golden and crisp

9. Allow to cool for 5 mins if serving warm, or cool completely before packing
