Baked veggie burgers
These bun-free patties are still really filling and are great cold, too.

Ingredients
100g sweet potato, diced
198g can Co-op sweetcorn,drained
400g can chickpeas, drained
1 clove garlic, chopped
1/2 tsp ground cumin
Pinch chilli flakes
1/2 tsp smoked paprika
8 tbsp Co-op plain flour
Freshly ground black pepper
1 tbsp sesame seeds
6 tbsp Co-op fresh tomato salsa
2 handfuls Co-op mixed salad;
Method
Preheat the oven to 200°C /fan 180°C /Gas 6.Put just enough water in a small pan to cover the bottom and bring to the boil.
Add the sweet potato, cover and cook for 5 mins.
Remove the lid and continue to cook for 3-4 mins, until the water has evaporated and the sweet potato is tender.
Meanwhile, blend the sweetcorn, chickpeas, garlic, cumin, chilli, smoked paprika and flour together.
Season with black pepper, add the sweet potato, and blend again until combined.
Shape the mixture into 4 patties, and coat one side in the sesame seeds.
Place on a baking sheet lined with greaseproof paper, chill in the fridge for 15 mins, then bake for 15 mins.
Top the patties with some fresh tomato salsa and serve with the mixed salad.
