Banana & spinach doughnuts
These baked doughnuts make a great talking point – the spinach is surprisingly good!

Ingredients
110g Co-op self raising flour
50g Co-op British spinach
1 Co-op Fairtrade banana, chopped
50ml Co-op semi-skimmed milk
50ml Co-op vegetable oil
1 tbsp Co-op clear honey
1 large Co-op British free range egg
FOR THE ICING:
Juice of ½ lemon
2 tbsp Fairtrade icing sugar;
Method
1. Preheat the oven to 180°C/fan 160°C/Gas 42. Put the flour in a large bowl and make a well in the centre
3. Whizz the spinach, banana, milk and vegetable oil together in a food processor
4. Add the honey and egg, then blend briefly again
5. Pour the mixture into the well in the flour, mix together, then spoon into a piping bag
6. Pipe into a 6-hole doughnut tin
7. Bake for 10-15 mins, until risen and cooked through
8. Leave the doughnuts to cool in the tin for 5 mins, then turn out and leave to cool completely
9. Once cool, make the icing by adding the lemon juice to the icing sugar, little by little, until you have a thick but pourable icing
10. Drizzle over the doughnuts to serve
