Cajun steak tacos
The homemade Cajun rub makes the British steak extra tasty

Ingredients

2 Co-op soft tortillas
2 tbsp Co-op olive oil
1 tbsp Cajun rub
200g Co-op British sirloin steak
1 red onion, sliced
1 1/2 peppers (any colour), deseeded and sliced
1/2 x 400g can kidney beans, drained
1/4 Co-op British iceberg lettuce
2 tbsp sour cream
2 tbsp fresh coriander, roughly chopped (optional);

Method

Preheat the oven to 200°C/fan 180°C/Gas 6
Brush the tortillas with 1 tbsp of olive oil, scrunch 2 pieces of foil into cylinders and fold the tortillas in half around them
Lay on a baking tray and cook for 10 mins
Work the Cajun rub into the steak and fry in the remaining oil for 3-5 mins on each side
Remove from the pan, slice thinly and set aside
Add the onion and peppers to the pan and fry for 5 mins
Then add the steak, along with the kidney beans, and heat through for 2 mins
To serve, shred the lettuce and divide between the tacos, then add the beef mixture and top with the sour cream and coriander, if using
