Easy paella style rice

Ingredients
2 onions, peeled and chopped
3 cloves garlic, peeled and crushed
1 tbsp olive oil
1 tsp ground turmeric
250g Co-op easy cook basmati rice
500ml hot chicken stock (made from 1/2 stock cube)
400g tin chopped tomatoes
150g Co-op chorizo ring, sliced about as thick as a £1 coin
2 whole roasted peppers from a jar, chopped (optional)
Handful of fresh parsley, chopped (optional);
Method
In a large frying pan, gently soften the onions, garlic and chorizo in the olive oilStir in the turmeric and rice, and cook for 1 minute
Pour in the chicken stock and tomatoes, cover and simmer for 8 minutes
Stir in the peppers, if using, replace the lid and cook for 5 more minutes
Take the lid off and give it all a good stir - the rice should be tender
