Festive citrus slaw
Take a break from rich festive food with this light vegan salad.

Ingredients

1 tbsp Co-op olive oil
1 tsp sesame oil
1 tsp soft light brown sugar
1 tsp soy sauce
1 tsp white wine vinegar
1 inch piece fresh ginger, grated
1 mild red chilli, sliced (optional)
1 red cabbage, finely sliced
3 spring onions, finely sliced
1 medium carrot, coarsely grated
1 tbsp sesame seeds, toasted
2 satsumas or clementines, peeled and segmented
Handful fresh coriander (optional)

Method

1. Combine the oils, sugar, soy sauce, vinegar, ginger and chilli, if using, in a small bowl and whisk
2. Place the remaining ingredients in a large bowl and drizzle over the dressing
3. Toss together and serve immediately, scattered with fresh coriander, if you like
