Quick chicken quesadillas

Ingredients
1/4 red onion, finely sliced
1 red pepper, deseeded and finely chopped
120g pack Co-op British roast chicken breast, finely chopped
50g Co-op Irresistible Somerset vintage Cheddar, grated
1 tbsp fresh coriander, roughly chopped (optional)
4 Co-op soft tortilla wraps
Pineapple & sweetcorn salsa (optional, see recipe opposite);
Method
1. Divide the onion, pepper, chicken, cheese and coriander, if using, between 2 tortillas2. Add the tops and, one at a time, gently dry fry for 3-4 mins on each side, until golden
3. Serve cut into wedges, with some salsa spooned over, if you like
