Easy pasta bake
Add extra colourful veg to jazz up a jar of pasta sauce and create this tasty dish

175g Coop pasta
1 tsp Coop olive oil
½ red pepper, deseeded and chopped
1 clove garlic, sliced
100g frozen peas
220g jar tomato & basil pasta sauce
Small handful fresh parsley, chopped (optional)
60g Coop lighter mozzarella, sliced


1. Preheat the oven to 190°C/fan 170°C/Gas 5

2. Cook the pasta according to the pack instructions

3. Drain well, retaining 2 tbsp cooking water

4. Meanwhile, heat the olive oil in a large pan and fry the chopped red pepper for 5 mins

5. Add the sliced garlic and frozen peas and cook for 2 mins, then stir in the pasta sauce

6. Add the pasta and cooking water, then stir in a small handful fresh parsley, chopped, if you like

7. Spoon into an ovenproof dish and top with sliced mozzarella

8. Bake for 25 mins
