Chicken fried rice
A speedy, warming bowlful made even easier with Coop frozen veg

Ingredients

1 tbsp sunflower oil
2 Coop British chicken breast fillets, chopped
150g Coop British Brussels sprouts, thinly sliced
2 spring onions, chopped
175g Coop frozen mixed vegetables
250g pack Coop Chinese egg fried rice
Coop light soy sauce (optional)

Method

1. Heat 1 tsp of the oil in a frying pan or wok, and stir fry the chicken on a high heat for 4-5 mins, until just cooked

2. Set aside and keep warm

3. Wipe out the pan, add the rest of the oil and stir fry the sprouts and spring onion for 2-3 mins

4. Add the veg and 2 tbsp water, and stir fry until thawed and softened

5. Add the rice and another 2 tbsp water, and stir fry for 2-3 mins

6. Add soy sauce to taste, if using, then return the chicken to the pan to heat through
