Festive chutney
This fragrant dip goes brilliantly with your favourite Coop British cheeses

1 tbsp Coop olive oil
2 red onions, finely chopped
20g ginger, finely grated
1 red chilli, finely chopped
800g firm pears, cored and diced
2 star anise (optional)
1 tsp cinnamon
25g Coop light brown soft sugar
2 tbsp Coop cider vinegar
2 oranges, both zested, 1 juiced
85g Coop fresh cranberries


1. Heat the oil in a large saucepan over a low heat
2. Add the onion, ginger and chilli, and cook for 15 mins, stirring often, until softened
3. Add the pear, star anise (if using) and cinnamon, and fry for 5 mins more
4. Stir in the sugar and cider vinegar
5. Once the sugar has melted, add the orange zest, juice and cranberries
6. Gently bubble for 20 mins, stirring occasionally and adding a splash of water if needed, until the pears are very soft but still holding their shape, and the liquid is syrupy
7. Store in sterilised jars and keep in the fridge for up to 5 days
