Braised sausage with lentils
Ditch the mash and team your bangers with nutty lentils instead

1 tbsp olive oil
6 Co-op Truly Irresistible pork sausages
1 red onion, peeled and finely chopped
4 carrots, peeled and cut into small pieces
2 cloves garlic, peeled and finely chopped
200g Co-op green lentils
700ml vegetable stock (using 1 stock cube)
Sprig fresh thyme (optional)


Heat the oil in a heavy-based casserole dish. Add the sausages and cook for a few minutes on each side until golden all over, then remove from the pan and put on a plate

Add the red onion and carrot, and cook gently until just soft. Add the garlic and cook for a minute, then return the sausages to the pan with the lentils, stock and thyme, if using

Cover with foil and a casserole lid, and simmer gently for 25 minutes or until the lentils and sausages are cooked
