Chilli and candied bacon pancakes
Here’s a different but tasty topping idea for your fluffy pancakes

Ingredients

150ml natural yogurt
150ml Co-op semi-skimmed milk
1/4 tsp chilli flakes
1 Co-op British egg yolk
1 tsp bicarbonate of soda
160g Co-op plain flour
1 tsp vegetable oil
10g Co-op unsalted butter
2 tsp Co-op olive oil
8 rashers Co-op Irresistible smoked bacon
2 tbsp maple syrup
1 Co-op ripe and ready to eat avocado
1 tbsp lemon juice

Method

Put the natural yogurt, milk, chilli and egg yolk in a bowl, setting aside the white

Add the bicarbonate of soda and plain flour and whisk until lump-free

In a separate bowl, whisk the egg white until stiff and fluffy

With a large metal spoon, fold it into the batter

Heat 1 tsp vegetable oil and 10g Co-op unsalted butter in a nonstick frying pan over a medium low heat

Add a quarter of the batter and cook for 2-3 mins on each side, flipping in between

Keep warm on a plate while you cook 3 more pancakes, topping up with 1 tsp vegetable oil, if needed

Meanwhile, add the olive oil to a frying pan over a medium heat and fry the bacon until crisp

Drizzle the maple syrup over the bacon and cook for a further minute

Peel, stone and chop 1 Co-op ripe and ready to eat avocado

Lightly crush with a fork and stir through the lemon juice

Top the pancakes with a spoonful of avocado, the crispy bacon and an extra sprinkle of chilli, if you like them spicy
