Ultimate ‘hedgehog’ garlic bread

Co-op Irresistible olive oil and rosemary bloomer
30g Co-op unsalted butter
2 cloves garlic, crushed
Handful fresh parsley, chopped (optional)
1 x 140g pack Co-op Irresistible Italian platter
160g Co-op mozzarella
20g Parmesan, grated


1. Preheat the oven to 190C/fan 170C/Gas 5
2. Cut slices across the bloomer, without cutting all the way through
3. Then cut across the other way to make small squares. Sit the loaf on a large piece of foil
4. Melt the butter and add the crushed garlic. Add fresh parsley if you like, and drizzle into the slits of the loaf
5. Rip the Italian platter into small pieces and poke between the squares of bread
6. Then tear the mozzarella into small pieces and poke those in, too
7. Sprinkle the loaf with grated Parmesan
8. Bring the foil up around the loaf to make a parcel and bake for 15 mins. Undo the foil and put back in the oven for 10 more mins, until the cheese has melted and the bread is golden
