Badam doodh (masala almond drink)

This is the ultimate welcome or festive drink, usually served if celebrating an engagement or at Diwali

Ingredients

500ml unsweetened almond drink (or any non-dairy drink of choice)
2 tbsp chopped or sliced almonds
1 tbsp chopped pistachios
3 tbsp local clear honey
½ tsp ground cardamom
Pinch saffron
Ice cubes, to serve
Dried rose petals, to decorate (optional)

Method

1. Heat the almond drink in a saucepan on a low heat until it starts to boil, then add the rest of the ingredients except the ice cubes and rose petals, if using

2. Simmer for around 10 mins

3. Leave to cool, then chill fully in the fridge

4. When ready to serve, place a few ice cubes into each glass, pour over the badaam doodh, and decorate with dried rose petals, if you like

5. If you prefer just to use almonds, simply omit the pistachios and use 3 tbsp almonds instead
