Avocado and yogurt dip
Give your lunchbox a healthy boost with this zingy dip teamed with crunchy fresh veg.

Ingredients
1/2 Coop ripe and ready to eat avocado
150g Coop natural yogurt
Juice of 1/2 lime
1 tsp ground coriander
10g fresh coriander
2 Coop pitta breads, toasted and sliced
1 red pepper, deseeded and cut into strips
2 carrots, sliced into batons
3 radishes, halved
Method
Scoop out the flesh of the avocado and blend
Add the yogurt, lime juice, ground coriander and fresh coriander
Blend again, until smooth
Serve with pitta bread, red pepper, carrots and radishes
