Broccoli macaroni cheese
Give classic mac ‘n’ cheese a delicious veggie boost

300g Co-op macaroni
1 broccoli head, cut into florets
30g Co-op unsalted butter
1 heaped tbsp Co-op plain white flour
400ml semi-skimmed milk (or 300ml milk and 100ml cooking water)
120g Co-op grated mature Cheddar


1. Cook the pasta according to the pack instructions, adding the broccoli florets to the pan halfway through, then drain
2. Meanwhile, melt the butter in a small pan
3. Stir in the flour and cook for 2 mins
4. Remove the pan from the heat and gradually add the milk, a little at a time, stirring well until fully incorporated before each addition
5. Put the pan back on the heat and cook, stirring, until the sauce has thickened and been bubbling for 2 mins
6. Stir in the cheese and season with black pepper
7. Preheat the grill to medium-high
8. Stir the cheesy sauce through the pasta and broccoli, then spoon into a 1.4 litre baking dish
9. Grill for 4-5 mins, until golden, then serve
