Red pepper relish and maple bacon burger

Ingredients

100ml cider vinegar
4 tbsp Co-op clear honey
3 red peppers, finely sliced
1 tsp dried rosemary
1 red chilli, sliced
8 Co-op Irresistible Hereford beef burgers
8 rashers Co-op British streaky bacon
Maple syrup, for brushing
80g Co-op Irresistible Somerset vintage Cheddar
8 Co-op white buns
Co-op British little gem, shredded

Method

1. Gently heat the vinegar and honey in a pan until melted
2. Add the sliced red pepper, rosemary, sliced chilli and 300ml water
3. Season, then simmer for 30 mins, stirring regularly
4. Add a splash of water if too sticky
5. Leave to cool
6. Meanwhile, grill the burgers and bacon according to the pack instructions
7. When almost cooked, brush the bacon with maple syrup and grill for 2 mins more
8. Melt 10g Co-op Irresistible Somerset vintage Cheddar over each beef burger
9. Serve in a Co-op white bun with 1 heaped tsp relish, a rasher of bacon and a handful little gem lettuce
