Red velvet brownies
These decadent bite-sized treats are made with Coop Fairtrade dark chocolate

Ingredients

100g local unsalted butter, plus extra for greasing
2 x 135g bars Coop Fairtrade dark chocolate, broken up
2 tsp vanilla extract
100g caster sugar
4 tsp red food colouring
2 local eggs
100g Coop self-raising flour
Crème fraiche to serve (optional)

Method

1. Preheat the oven to 180ºC/fan 160ºC/Gas 4

2. Grease and line the base of a 20cm square baking tin

3. Melt the chocolate with the butter and vanilla extract in a heatproof bowl over a pan of gently simmering water, making sure the bowl doesn’t touch the water

4. Remove from the heat, add the sugar and food colouring and stir until dissolved

5. Add the eggs and whisk together

6. Mix in the flour, pour into the tin and bake for 15 mins

7. Remove from the oven and leave to cool

8. Turn out, then cut into 25 squares

9. Serve with a dollop of crème fraÎche, if you like
