Pulled beef sandwiches

Ingredients

755g Coop Irresistible British silverside beef roasting joint
4 cloves garlic
2 tbsp English or Dijon mustard
2 tsp paprika
2 tsp chilli flakes
1½ tbsp light brown soft sugar
2 red onions, peeled
300ml beef stock
100ml tomato ketchup
6 gherkins, 6 tbsp coleslaw and a large handful fresh coriander, chopped (optional)
Serve with 6 bread rolls

Method

1. Preheat the oven to 140°C/fan 120°C/Gas 1

2. Peel and thinly slice 2 of the garlic cloves

3. Cut a few small slits in the top of the beef joint and poke the slices inside, then sit the meat in a casserole dish

4. Spread the mustard over the beef and sprinkle on the paprika, chilli and sugar

5. Rub into the meat and leave in the fridge to marinate for at least 1 hour, or overnight if you have time

6. Cut the red onions into chunks and scatter around the beef

7. Add the remaining 2 garlic cloves, whole, and pour the stock into the dish

8. Cover and cook for 3 hours 30 mins, basting occasionally

9. Remove the beef from the liquid, cover with foil and leave to sit for 30 mins

10. Meanwhile, pour the pan juices into a saucepan, add the ketchup and reduce until thickened

11. Using two forks, shred the beef and warm through in the sauce

12. Serve with the rolls, gherkins, coleslaw and coriander, if using
