Avocado and tomato on toast
If you've got avocados and bread that need using up, this filling breakfast will keep you full until lunch!

Ingredients

Juice of 1 lime
2 tbsp olive oil
8 slices wholegrain bread (or whatever you need to use up)
3 ripe tomatoes
3 ripe avocados
15g fresh coriander leaves, finely chopped (optional)
To serve, sweet chilli sauce or a fresh chilli, finely sliced (optional)

Method

1. Squeeze the lime juice into a bowl, add the oil and whisk to make a dressing

2. Toast the bread and thinly slice the tomatoes

3. Cut the avocado in half, scoop out the stone with a teaspoon and peel away the skins

4. Thinly slice the flesh

5. Drizzle half the dressing over the toast

6. Top with the tomatoes, then the avocado

7. Drizzle over the remaining dressing and sprinkle the coriander over the top

8. Serve with sweet chilli sauce or fresh chilli slices, if you like
